There was a big emphasis on getting right with God, and living a moral life at all times, because you never knew when you'd be struck dead and facing the judgment of God. Besides which, if the knight really had the advantage of surprise like that, I imagine there's a fair chance he'd just take the enemy as a prisoner for ransom instead, depending on how valuable he was. That happened a lot back in the day.
