Castlevania (specially the SCV IV ost)
Sonic the hedgehog (1 and 2... the others are very good too)
Zelda (OoT music is very good... I also like ALTTP and Link's awakening)
Streets of Rage
Twin bee (the music for the first Twin bee game was done by Michiru Yamane, same person who did CV SOTN and Lament of innocence... and Twin bee was her first work back in 1985 :B)

anime:
Saint Seiya (not only the Make-up songs, the background music is amazing... and of course the french/spanish theme: Les chevaliers du zodiaque/Los caballeros del zodiaco )
the movie "Royal Space Force" has a very nice soundtrack too (by Ryuichi Sakamoto)

My favorite soundtrack would be the Inu-Yasha Castle Beyond the Looing Glass. It's long, but worth listening to...^^ It's the soundtrack to the second movie....XD

YOKO KANNO IS SO GREAT ^-^
I like to listen to her Grandia2 Remix Song...its very freakish and of course Vision of Escaflowne and Arjuna are one of the best Anime Soundtracks ever.

anime: Cowboy Bebop has an amazing soundtrack! (Well, of course! It's Yoko Kanno!) Yoko Kanno combined with Steve Conte and Mai Yamane makes for one of the best sound tracks ever!

I'm also very fond of the .hack//sign soundtrack. The songs are so enchanting and beautiful. They just have a very dreamy feel to them (just like the anime). .Hack//sign is truly a masterpiece and the soundtrack just complements the animation and mood of the show perfectly!

Witch Hunter Robin also has a great soundtrack. The only problem I've found is that in the episodes, they seem to play the same songs over and over again. I think they need a little more variety.

Record of Lodoss War is also wonderful music-wise. I especially love the theme song (made by Yoko Kanno of course!) and the ending song.

Yes, I know that's 4 animes, but I couldn't bear to cut one of them out!

Movie:
On the non-anime front, Lord of the Rings has an amazing soundtrack as well! Howard Shore did an amazing job with this soundtrack. Listening to the soundtrack just makes you feel like you're there.
